After the great success of last years event Steven and Tim are back to cook some more incredible food. The evening will be a night of incredible food served by two top chef’s at the top of their game, championing sustainable food along side sustainable beer (that’s us) the evening should take you on a journey of culinary delights!
Steven Lamb is a curing & smoking expert, teacher, presenter, culinary consultant and award-winning River Cottage author.
After a background in media, Steven’s food career began nearly 20 years ago when he became the linchpin of Hugh Fearnley-Whittingstall’s River Cottage operation, regularly appearing in the TV series and being instrumental in establishing the internationally acclaimed cookery school on the Devon / Dorset border. It is here that his knowledge of food was fine-tuned and his passion for curing & smoking and other artisan culinary methods was nurtured.
Steven is the author of two books, the award winning River Cottage: Curing & Smoking and more recently River Cottage: Cheese & Dairy. He was a contributor to the River Cottage A-Z of Ingredients bible and also writes on an array of subjects for print and online.
Now, as an internationally renowned expert and always keen to share his knowledge, he regularly teaches at some of the leading UK and International cookery schools including River Cottage, Leith’s School and Food, Vale House Kitchen, Seasoned Cookery School as well as mentoring professionals in some of the world’s leading restaurants and hotel groups helping to develop their own in-house, signature products.
Tim Maddams is a private chef, writer, cookery teacher and presenter living in Devon. Tim has been into food from an early age, spending much of his childhood on the family farm in Wiltshire, gleaning a close understanding of farming and fostering a love of the great British countryside, wild food and quality produce which forms the cornerstone of how he thinks about food today.
Over the course of Tim’s career, he has had the privilege to work with such culinary luminaries as Fergus Henderson, Alistair Little, Marco Pierre White and Mark Hix, as well as a stint managing VIP catering for the Ferrari F1 team in Europe. A return to his roots saw Tim lead the team at River Cottage Axminster, where he regularly appeared alongside Hugh Fearnley-Whittingstall on both the River Cottage series on Channel 4 and the Fish Fight campaign.
